One Week Down


The first week has gone, since beginning my gluten free way of life!  It has not been as hard as I expected it to be honestly.

I found a wonderful influencer on You Tube whose whole family is GF and I have gotten some wonderful recipes already.


It has been fun cooking again, the long draught of take out had gotten so old.  It started after mom died, and it just became easy and actually really boring.  To cook with whole foods again and actually have taste, is a great thing.  Do not let yourself think that you cannot do this.  I thought I would not be able to as well.  It takes me a bit longer now, as I have trouble standing, but that will get better with time as well.

The sheet pan Shrimp recipe was a huge hit as well as the Balsamic and Honey Pot Roast with roasted carrots and mashed potatoes.  I will say I can tell a huge difference already.

My pain is subsiding and my brain fog as well, I also am sleeping better, longer. Those are the two things I needed most out of this, everything else is icing on the cake so to speak!


I know I am just beginning and there is a long journey ahead, but I look forward to it now!  I have noticed that I am not craving sugar like I thought that I might. In fact I am not craving anything for that matter!  Who would have thought, right?  I have been down this road before of healthy eating and lifestyle.  So doing it, I know I can.  It was a matter of motivation.  PAIN was that for me.




When we think we are incapable of something, life has a way of showing us, just what our strengths are.  I look forward to my journey, and healing my body!  I have abused it for too long, and since I am 59 next week, I am not getting any younger.

I had my first GF bread, I purchased it, and toasted it and it was not bad!  So, that was going to be a huge issue for me, since I love bread, and well, that hurdle is solved!  I just need to keep moving ahead!
